2 cups (250g) all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon Isle of Skye Sea Salt Crystals

1/2 cup (115g) unsalted butter, softened

1 1/4 cups (250g) granulated sugar

2 large eggs
-
1/2 cup (120ml) milk

1 medium lemon zest

2 medium fresh lemon juice
Directions
Preheat your oven to 177°C (350°F). Grease a 9-inch round cake pan and line the bottom with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and Isle of Skye Sea Salt Crystals. Set aside.
In a large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the milk, lemon zest, and lemon juice.
Gradually add the dry ingredients to the wet ingredients and mix until just combined, being careful not to overmix.
Pour the batter into the prepared cake pan and spread it evenly.
Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
