Celebrate the flavors of Scotland with this simple yet elegant salmon recipe. Isle of Skye Seaweed Sea Salt enhances the fish with a subtle oceanic twist.

Ingredients
- 2 fresh Scottish salmon fillets (approx. 150g each)
- 2 tbsp olive oil
- 1 tbsp Isle of Skye Seaweed Sea Salt
- 1 lemon, sliced
- 1 tbsp fresh dill, chopped
- 1 tsp black pepper
- 200g baby potatoes, boiled and halved
Directions
Preheat the Oven: Set your oven to 180°C (350°F). Line a baking tray with parchment paper.
- Season the Salmon: Rub each fillet with olive oil. Sprinkle generously with Isle of Skye Seaweed Sea Salt and black pepper.
- Bake the Salmon: Place the fillets on the prepared tray. Top each with a slice of lemon and a sprinkle of dill. Bake for 18–20 minutes, or until the salmon is just cooked through and flakes easily.
- Prepare the Potatoes: Toss the boiled potatoes with olive oil, a pinch of Isle of Skye Seaweed Sea Salt, and fresh dill. Serve as a side.
- Plate and Serve: Serve the salmon hot with the seasoned potatoes and an extra lemon wedge for garnish.
Recipe Note
For perfectly cooked salmon, ensure it flakes easily with a fork but still retains a slightly translucent centre. Overcooking can dry out the fish, so keep a close eye during the last few minutes of baking.
