Ingredients
- 3 ripe bananas, mashed
- ½ cup (100g) brown sugar
- ⅓ cup (75g) melted butter
- 2 eggs, at room temperature
- 1 teaspoon vanilla extract
- 1 ½ cups (190g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon Isle of Skye Natural Sea Salt Crystals
- ½ cup (optional) chopped nuts or chocolate chips
Directions
Preheat oven to 175°C (350°F). Grease a loaf pan and line with parchment paper.
- In a large bowl, mash the bananas and mix in the brown sugar, melted butter, eggs, and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and Isle of Skye Sea Salt Crystals.
- Gradually fold the dry ingredients into the banana mixture until just combined.
- If using, stir in chopped nuts or chocolate chips.
- Pour the batter into the prepared pan and bake for 50-55 minutes, or until golden brown and a toothpick inserted in the centre comes out clean.
- Let the banana bread cool completely before slicing.
Recipe Note
For extra banana flavour, let your bananas ripen until they have dark spots before using. Want an even richer taste? Replace half the butter with sour cream for a super moist texture!
