These rustic, savoury crackers are a delightful fusion of Scottish culinary traditions and the pure, briny flavour of Isle of Skye Sea Salt. With wholesome oats and a generous sprinkling of hand-harvested sea salt, these crackers are a delightful snack or accompaniment to soups and dips.

1 cup (100g) rolled oats

1 cup (125g) all-purpose flour

1 tsp (5g) Isle of Skye Sea Salt, plus more for sprinkling

1/2 tsp baking powder

1/4 cup (60ml) cold unsalted butter, cubed

1/3 cup (80ml) cold water

1 tbsp (15ml) honey (optional)
Directions
Preheat the oven to 375°F (190°C). Line a baking tray with parchment paper.
In a food processor, pulse the oats a few times until coarsely ground. Add flour, 1 tsp Isle of Skye Sea Salt, and baking powder. Pulse to combine.
Add the cold, cubed butter and honey (if using). Pulse until the mixture resembles coarse crumbs.
With the machine running, slowly add the cold water until the dough just comes together. Do not overmix.
Turn dough onto a lightly floured surface and knead briefly. Roll or pat into a rectangle about 1/4 inch thick.
Using a pizza cutter or knife, cut into 2x4 inch rectangles or desired shapes. Arrange crackers on the pre-prepared baking tray, spacing slightly apart.
Lightly brush or spritz the tops with water and sprinkle generously with additional Isle of Skye Sea Salt.
Bake for 18-20 minutes until lightly browned and crisp. Allow to cool completely on wire racks.
Serve crackers alongside soups, dips, cheeses or enjoy them on their own for a delightfully rustic Scottish-inspired snack.

For extra flavour, try adding 1 tsp dried herbs like rosemary or thyme to the dough.
Substitute quick oats if rolled oats are unavailable, pulsing just until coarsely ground.
