230g unsalted butter, softened

165g light brown sugar

100g granulated sugar

2 large eggs

1 tsp vanilla extract

285g plain flour

1 tsp bicarbonate of soda

175g butterscotch chips

2 tsp Isle of Skye Sea Salt Flakes, plus more for sprinkling
Directions
Preheat the oven to 190°C (375°F). Line two baking trays with baking parchment.
In a large bowl, beat the softened butter with the brown and granulated sugars until light and fluffy, 2-3 minutes.
Beat in the eggs one at a time, then stir in the vanilla.
In another bowl, whisk together the flour, bicarbonate of soda and 1/2 tsp salt.
Gradually mix the dry ingredients into the wet until just combined, being careful not to overmix.
Fold in the butterscotch chips and 2 tsp Isle of Skye Sea Salt Flakes.
Bake for 10-12 minutes, rotating trays halfway, until lightly golden brown at the edges.
Allow to cool on the baking tray for 5 minutes before transferring to a wire rack.
